a little bite of something sweet

My Great Gramma was one of the most wonderful people you could ever meet. She was everyone's Gramma. She could talk, cook and play a mean game of cards. She had a saying of needing "A little bite of something sweet." I definately agree and this recipe for sure fit the bill. It again comes from my Auntie Penny and it was a definate winner in my house! I can't wait to try it again. It is her version of Peanut Butter Cups. They are super quick and easy to make and mmm, mmm tasty! So without further ado, here is the recipe.

Peanut Butter Cups
1 lb powdered sugar
1 1/2 cups peanut butter
1/3 cup milk
1/4 cup honey
1/2 tsp salt
1 tsp. vanilla
1 6oz package chocolate chips, melted
Combine all ingredients except chocolate chips and mix by hand until blended. Spread and pat into a 9 inch square pan. Spread melted chocolate chips over squares. Makes 64 pieces.
My Notes: Well as most of you know, Declan is allergic to peanuts so just to prevent any possible problems of his curious self I substituted the peanut butter for cashew butter. (Really very tasty!) I only had an 8 inch square pan so my bars where extra thick. I also used grain sweetened chocolate chips (found on the natural food aisle or at the health food stores). I recommend these for their intense chocolate flavor. A very nice complement for the base.
