peanut, peanut butter.............and waffles!

Mmmmmmmmm, how I love to eat. And of course certain things you grow up with stick with you throughout life. As a kid I am sure I ate more than my fair share of PB&J like most kids do. As an adult I don't tend to eat as much peanut butter unless it is enrobed in chocolate of some kind. Not sure why but that's just the way I prefer it. And of course now, having a son allergic to peanuts, I rarely eat it at all. I keep it way in the back of the tallest cupboard in the kitchen for the older son who LOVES PB&J and frequently requests it for breakfast. Sometimes with cheese, sometimes without. (I'm not saying for sure but I'm pretty certain that's from grandma!) So this morning I'm making all the kids waffles for breakfast and it strikes me that I haven't had a waffle in a while. Let alone a waffle slathered in peanut butter and drenched in syrup. Yum! Something about that particular combination is just so dang good I couldn't resist it once the thought was there. So after getting the kids all settled with their breakfast I made my own. One beautifully golden waffle, 1/4" of peanut butter and a pool, yes a pool, of syrup. I took a bite.....oh man! What have I been missing all these years???? It was a morning favorite in my household growing up and I'd forgotten all about it. How could that have happened?!?! It was pure peanut-y, maple-y blissful bites of breakfast. I was in a sugar goodness of heaven. Okay so it may not be the healthiest of breakfasts but it sure did taste good. Although we may not indulge in childhood flavors as much when we get older, I say we all need a wonderful treat once in a while to remind us of why growing up was so tasty!
